Grappa is made from distilled grapes left over from the pressing when making wine. Grapes pressed for good Italian wines are only pressed 60 percent, the remaining 40 percent is then distilled to make fine Italian grappa. This is not always the rule because some lower end grappa is made from grapes that have been almost completely pressed and often the stems and stock is used in the distilling process. When making grappa from grapes with 40 percent of the juice left in them the flavours, aroma and the quality of the grape are left over for the distilling process. The grapes can be distilled in two ways;
1). Industrial - Usually made with dried must, skins, seeds and stems. Bulk boiled and cooled then distilled.
Result: Strong, bitter, burning, poor flavour and usually inexpensive grappa that tastes like kerosene.
2). Artigianale (Craftsman / Artisin) - Slowly distilled from grapes with high juice content (40%) drop by drop. Vapor rises and then is cooled in a long vertical tube.
Result: Flavourful, beautiful aroma of grapes used, soft and not harsh with a delicate or robust taste.

The experience of the distiller plays a prominent role in this process: the sensitive extraction of a lengthy series of aromatic components which provides the liquor with its characteristic aroma and taste.

GRAPPA di CHARDONNAY Conte Tasca d’Almerita Made the way grappa should be made, by Artisans, on the Regaleali Estate in Sicily. The estate grown Chardonnay grapes are first soft pressed to extract 60% of the juice for vinification (Regaleali Chardonnay vdt) leaving the remaining 40% to be immed-iately fermented at a controlled temperature to produce this grappa.
A very slow discontinuous distillation occurs upon completion of the fermentation. Only the core is selected, with the heads and tails of the distillation being discarded. The resulting marc, which is approximately 100% pure alcohol is thinned to 42% using fine mineral water.
A smooth, flavourful, sparkling clear grappa with a wonderful honey-melon nose of Chardonnay. Only 2000 (500mL) bottles produced.

A very slow discontinuous distillation occurs upon completion of the fermentation. Only the core is selected, with the heads and tails of the distillation being discarded. The resulting marc, which is approximately 100% pure alcohol is thinned to 42% using fine mineral water.

Grappa di MoscatoDistilled from the fresh must of soft pressed 100% Moscato grapes grown on the Tenute Coluč di Massimo Oddero estate in the Diano d'Alba.
